Sweet Potato Mash

Sweet Potatoes are one of the most nutritious vegetables you can eat. Lots of vitamins and they are so easy to prepare and can be done in advance. Just the perfect side dish. Not to mention their spectacular color.

Ingredients
  

  • Two Sweet Potatoes
  • 2 tablespoons butter
  • 1 tsp kosher salt

Instructions
 

  • Preheat the oven to 375 degrees.
  • Wrap the sweet potatoes in foil, place in a baking dish and cook for 1 ½ to 2 hours. They are done when they can be pierced with a sharp thin knife or cake tester without any resistance. Sometimes the foil packages start to leak sugar syrup – which is a very good indication they are done, but it is best to check so they are cooked completely through.
  • Allow to cool.
  • Peel off the skins and discard the skins to the compost.
  • Add 2 tablespoons unsalted butter and salt and mash with a fork.
  • They can be stored and reheated in the microwave when ready to serve.
