Orange Nut Bread

This quick bread can be enjoyed plain and is also wonderful when served as a tea sandwich with some sweetened, softened cream cheese as the filling between two thin slices of this delicious and moist bread.

Ingredients
  

  • 1 cup chopped dates
  • zest of two oranges
  • 1 cup orange juice (the juice from the two oranges plus enough boiling water to make 1 cup of liquid)
  • 1 tsp baking soda
  • 1 egg
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil corn/canola
  • 2 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1/2 cup chopped walnuts or pecans
  • 1 tsp vanilla

Instructions
 

  • Preheat the oven to 350 Degrees.
  • Grease and flour a medium-sized loaf pan. Combine the juice, baking soda, dates, and zest in a large mixing bowl. Allow the dates to soften in the liquid for 10 minutes. Measure the flour, baking powder, and salt into a sifter and sift over the date and orange mixture. Then add the egg, oil, vanilla, and sugar and stir to mix. Do not over-mix. This can all be done by hand.
  • Spoon the batter into the prepared pan. Place into the preheated oven and bake until a tester inserted in the middle comes out clean, usually about 45 minutes to an hour. Allow bread to rest in the pan for 10 minutes, then loosen the edges with a knife and turn out onto a cooling rack.
  • Wrap tightly when completely cool. Store in the fridge or in the freezer. This is a very versatile bread. Good for breakfast, lunch, or dessert.
