Daryl's Granola

My mother made granola from the whole earth catalogue when we were kids.   I have been making it ever since.  I stopped making it briefly during a weight gain period of my life - when I simply could not stop eating this delicious treat.  With age, has come wisdom.  Now I keep a 1/4 cup measure in the container - and use that to control my daily consumption!   Try it - it is delicious with yogurt, milk and of course, just on its own.

Ingredients
  

  • 5 cups rolled oats about 18 oz
  • 8 ounces raw sunflower seeds (approximately 2 cups)
  • 8 ounces raw pumpkin seeds (approximately 2 cups)
  • 8 oz sweetened or unsweetened shredded coconut
  • 1 tsp kosher salt
  • ¾ cup canola oil
  • ¾ cup honey
  • 2 tsp vanilla
  • 8 oz of sliced almonds

Instructions
 

  • Pre-heat the oven to 325 degrees.
  • In a two-cup mixing cup – use a whisk or fork to combine the oil, honey and vanlla. :
  • In a large mixing bowl, combine the oats, seeds and coconut.
  • Pour the honey-oil mixture over the oat mixture and toss to evenly coat the oat mixture.
  • Place into a large roasting pan with 2-inch-high sides and put in the oven. Set a timer and toss after 15 minutes, then 12minutes, then 12 minutes again, then 8 minutes, then 6 minutes, then 4 minutes – if necessary. It starts to brown faster as it cooks – so you toss it more and more frequently as you go.
  • As it roasts - make sure to scrap to the bottom of the roasting pan. The granola mixture that sticks to the bottom will burn – so you must rotate and stir very consistently – the ingredients at the bottom of the pan should rotate to the top etc. Same with the sides. Really mix it between roasting sessions. It should be evenly browned. Cook until nicely, and evenly toasted. It will burn if you don’t toss it frequently while roasting.
  • Remove from the oven and add the almonds. Mix thoroughly.
  • Allow to cool completely. Then place into airtight container(s). Eat in one sitting – like I tend to do!!!!

Notes

I do not recommend adding dried fruits such as chopped dates, dried cranberries or raisins and other dried fruit to the main mixture. The moisture in the fruit softens the crunchy quality of the granola, and the fruit becomes rock hard and chewy. If you like these additions, add them fresh to the portion you prepare for your meal.
