Egg Sandwich
This is a delicious way to have breakfast on the go. You can make this sandwich ahead of time, wrap it in foil, and pop it into a warm oven to hold it until you are ready to eat. If you are having others over for a breakfast party - you can make these ahead, then warm them in the oven and serve - them piping hot when the timing is perfect. I typically put grated cheddar cheese, scallions, and salsa - but you can alter the toppings/ingredients to suit your style and tastes. This is a very versatile recipe - and great to have in your "basics" skill set.

- non stick frying pan
Ingredients
- 3 eggs I use large eggs
- 1 tbsp butter
- 1 10" flour tortilla
- 1 oz grated cheddar More if you like cheese
- 2 tbsp salsa fresca
- 2 tbsp tomato salsa
- 1 tbsp cilantro, chopped
- 2 tbsp scallion, chopped
- salt and pepper to taste
Instructions
- Preheat the oven to 250 degrees
Prepare your ingredients
- Grate your cheese, and chop your scallion and cilantro.
Scramble the eggs
- Melt the butter in the skillet over low/medium heat
- Crack the eggs into a bowl and use a whisk to beat thoroughly
- Poor the eggs into the pan with the melted butter
- Using a rubber spatula, stir the eggs frequently to ensure they are cooked but not browned. Scrambled eggs should be yellow.
- Place the eggs onto the flour tortilla.
- Add toppings of your choice.
- Salt and pepper to taste as well
- Begin gently and fold the two sides of the tortilla toward the center, then bring the back flap up and over the two sides, and finish by rolling into a package.
- Wrap the sandwich in foil.
- Place into a 250-degree oven for 10 minutes to warm the tortilla.
Notes
If you are making these delicious sandwiches for a crowd, I suggest you make them one or at a time, wrap them, and hold them in the warming oven until the guests are ready, and you can then all eat together. The perfect way to enjoy your company - and not be working fiendishly at the oven - while everyone else is having fun.
