Pimento Cheese spread
A delicious appetizer - some call it "crack" for cheese lovers. I am currently in rehab after a very embarrassing binge-a-thon witnessed by friends. I completely encourage you to try this versatile spread. It can be put on a cracker or used on a sandwich – or just eaten by the spoonful.

- Stand mixer
Ingredients
- 8 oz grated cheddar cheese
- 4 oz cream cheese
- 1/3 cup mayonnaise
- 1/3 cup chopped roasted red pepper
- 1 tsp kosher salt
- 1 /2 tsp garlic powder
- 1/2 tsp cayenne pepper
Instructions
To make the cheese spread
- Combine the ingredients in the bowl of a stand mixer
- Mix on low speed at first, and then increase to medium speed
- Mix until the ingredients are well blended.
- Store the cheese in a storage container and refridgerate.
- Remove this from the refridgeator 1 hour prior to serving.
Notes
Grate the cheddar cheese cold, and then let it come to room temperature. The cream cheese should be room temperature as well.
You can use store bought roasted pepper, or fire roast your own.
